Cakes aren't just for sweet treats, but if you don't believe us, go ahead and give our hearty ham & scalloped potatoes cake a try! You love cake and you love scalloped potatoes, so what's not to love about this creamy, cheesy casserole? It may not be a sweet one, but you're still in for a real treat!
Wash the potatoes and cut them into 1/4-inch thick slices. Arrange the potato slices on a baking tray lined with parchment paper, drizzle olive oil on top, and season with salt and pepper. Transfer the baking tray to a preheated oven and cook at 325°F for 20 minutes. Remove the baking tray from the oven and let cool for 15 minutes.
Grease a 9-inch springform pan with butter and line the bottom and sides of the pan with potato slices. Place 3 large slices of ham on top of the potato slices on the bottom of the pan and grate about 4 oz of Swiss cheese on top. Layer potato slices, ham slices, and grated Swiss cheese 2 more times, making sure to gently press down each layer with your hand, and then add a final layer of potato slices on top.
Combine the eggs, heavy cream, salt, pepper, and nutmeg and carefully pour this mixture over the potato slices in the springform pan.
Transfer the springform pan to the warm oven and cook at 325°F for 1 1/2 hours. Let the ham & scalloped potatoes cake cool before serving.
