Carrot cake is without a doubt one of the best cakes in the world. But it's when you combine sweet and spiced carrot cake with rich chocolate cake that sparks really start to fly, which is exactly what's happening in this recipe! And because we all know that you eat with your eyes first, we wanted this cake to stand out both visually and in terms of flavor.
Preheat the oven to 350°F. Combine the ingredients for the chocolate cake and pour the batter into a greased loaf pan.
Push 5 waffle cones into the chocolate cake batter in the loaf pan. Combine the ingredients for the carrot cake and divide the batter between the 5 waffle cones.
Bake the chocolate carrot cake in the preheated oven for 2 hours and let the cake cool afterwards.
For the chocolate ganache, heat the heavy cream in a saucepan and add the chocolate chips, stirring constantly until smooth. Insert a skewer in each carrot cake cone and pour the chocolate ganache over the entire cake.
Sprinkle light and dark cookie crumbs over the chocolate ganache while it is still wet. Remove the skewers from the carrot cake and stick a sprig of fresh mint into each empty hole.
