Chocolate Box Cake

Equipment

  • 6 x 6-inch baking pan
  • 12 x 12-inch baking pan

Ingredients
  

  • 3 cups flour
  • 2.25 cups cocoa powder
  • 1 tsp salt
  • 1 cup sugar
  • 4 oz semi-sweet chocolate bar, chopped
  • 0.67 cup vegetable oil
  • 6 eggs
  • 2.75 sticks butter, softened
  • 2 cups Coca-Cola
  • 1 tbsp baking powder
  • 2 boxes Rocher Raffaellos or 10 oz coconut balls, crushed
  • 2 cups cream cheese
  • 1 tbsp vanilla extract
  • 24 Kit Kat bars
  • 16 white chocolate square cookies

Instructions
 

  • For the chocolate cakes, beat the butter and sugar until creamy and then mix in the eggs. Mix all the dry ingredients together and gradually add them to the butter mixture, followed by the Coca-Cola and vegetable oil. Finally, stir in the chopped chocolate. Line the baking pans with parchment paper and divide the cake batter between the 2 pans. Transfer the baking pans to a preheated oven set to 350°F and bake for 45 minutes. While the cakes are baking, prepare the coconut cream cheese frosting. Beat the crushed coconut balls, cream cheese, and vanilla extract until creamy and refrigerate until the cakes have cooled.
  • Cut the cakes horizontally so you have 2 small square pieces and 2 large square pieces. Spread some coconut cream cheese frosting over a small square piece and top with the other small square piece. Repeat with the large square pieces.
  • Place the small cake on top of the large one.
  • Spread some coconut cream cheese frosting over the back of the Kit Kat bars and use them to line the small cake and the large cake.
  • Use the white chocolate square cookies to create chambers inside the Kit Kat-lined cakes.
  • Finally, fill the chocolate box chambers with your favorite candy!
