Heat some oil in a pan and roast the chicken until cooked all the way through. Remove the chicken from the pan and let it cool down.
Sweat the sliced peppers, onions, and garlic in a pan.
Use two forks to shred the chicken meat.
Mix the vegetables and chicken together in a bowl and season with salsa, cumin, coriander, cinnamon, chili flakes, and salt. Stir everything together well.
Spread the mixture over a sheet of pizza dough and cut into three wide strips.
Roll up the first strip. Place this roll on the second strip, and roll it up into one strip. Repeat with the third and final strip, and you'll end up with one giant fajita roll.
Place the roll in a pan and bake in the oven for 40 minutes at 355°F.
Add all the sauce ingredients together in a pot and stir until a creamy sauce forms.
Pour the sauce over the gigantic chicken fajita roll and top with jalapeños. Yum!
