Wash the rice with cold water and put it into a pan. Add the water, ginger, vegetable broth, soy sauce, oil and salt. Mix the ingredients thoroughly before placing the chicken breasts and onion on top. Put the lid on the pan and let simmer on low heat for 14 minutes. Turn off the heat and let the pan sit covered for another 10 minutes.
For the first sauce, mix 1/4 cup of soy sauce with the honey. The second sauce consists of sweet and sour sauce mixed with lemon juice. For the third sauce, mix 1 tbsp of soy sauce with the sesame oil, spring onion, sugar and ginger.
