Ham and Veggie Pie

- 3 carrots
- 2 zucchini
- 1 eggplant
- 1 red onion
- 1 portion puff pastry
- 1 portion mozzarella
- 12 slices ham
- 6 oz crème fraîche
- 4 eggs
- 1 tsp salt
- 1 tsp pepper
Wash the veggies and cut them lengthwise into very thin strips.
Press the puff pastry into a quiche pan, making sure to also cover the edge. Cut the red onion into large pieces and scatter them on the surface of the pastry. Cut the mozzarella into slices and place them on top of the onion pieces.
Line the edge of the pan with a layer of carrot slices, followed by a layer of zucchini, then eggplant, and finally ham. Working in this order, from the outside in, fill the pan with rings of veggies and ham.
Mix the crème fraîche with the eggs and salt and pepper. Pour the mixture evenly over the vegetable and ham layers, and then bake the pie for 30 minutes at 355 °F.
