Don’t get us wrong, we’re a fan of quick, easy, and delicious. But sometimes, a persion just needs that certain something to surprise the taste buds and delight the senses. And as we all know, a good salad thrives not only on the right interplay of different and creative ingredients but also on the right dressing that brings everything together and creates balance. That’s where our strawberry vinaigrette comes in, simple, bright, and with the right kind of spicy twist to make you really appreciate each bite.

There’s something about summer salads that are so romantic. They work so well with those hazy and hot days, and pops of fresh fruit reinvigorate the senses. With this in mind, it wasn’t a far-fetched idea to not only use strawberries as an addition to the salad but also to incorporate them into the dressing. Ingredients
  

  • ¾ cup strawberries
  • 2 tbsp red wine vinegar
  • 3 tbsp walnut oil
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • some fresh basil
  • 1 splash lime juice
  • salt to taste
  • freshly ground pepper to taste

Instructions
 

  • Wash and hull the strawberries, then puree them finely with a(n immersion) blender.
  • Stir in the red wine vinegar, walnut oil, Dijon mustard, maple syrup, and a splash of lime juice.
  • Wash and finely chop the basil. Add it to the vinaigrette.
  • Season your vinaigrette with salt and freshly ground pepper to taste and mix well.
