Savory Herb Rolls: Love at First Bite

Who doesn’t love a roll? Bite-sized and often accompanied with a good dash of butter, they are especially good warm. Today we are preparing a particularly flavorful twist on the classic side with our savory herb rolls. Complete with a rich medley of herbs and melted Parmesan, we promise that you won’t be able to get enough of them! I personally like to prepare them for barbecues or for picnics. Whether fresh from the oven or chill, these rolls are the perfect summer accessory.

Our savory herb rolls are made from a very simple yeast dough, which is then brushed with a homemade herb butter. For the butter, you can simply use the herbs that you like best! Our own blend brings a Mediterranean flair to the side with rosemary, thyme, and oregano. Though basil works wonderfully too. The rolls are then refined with some grated Parmesan, sea salt flakes, and chili for a little heat. A perfect interplay if you ask!

Of course, our savory herb rolls can also be adjusted to be vegan by swapping out animal by-products for plant-based alternatives. For the dough, mix flour with water, some salt, and baking powder. Next, stir olive oil into the dough. Once the dough is ready, roll the dough and brush it with a homemade vegan herb butter. To make the vegan herb butter, opt for a plant-based Parmesan alternative. Our tip: Nutritional yeast, for example, will also work wonderfully and bring a nice cheesy aroma without any added cheese!

Afterwards, roll everything up from the long side. Cut the roll into slices, and arrange them in a greased baking pan. After about 20 minutes in the oven, you savory herb rolls are ready. Enjoy!

  • 1 9×13 inch baking pan

Ingredients
  

  • 4 cups all-purpose flour
  • 1 pinch of salt
  • 1 cup milk
  • 5 tbsp active dry yeast
  • 4 tbsp olive oil
  • 1 egg
  • cup butter plus some to grease the pan
  • 1 large garlic clove
  • 2 handfuls fresh basil optional
  • A few sprigs of fresh rosemary
  • A few sprigs of fresh thyme
  • A few sprigs of fresh oregano
  • red pepper flakes to taste
  • sea salt flakes to taste
  • ½ cup Parmesan grated

Instructions
 

  • In a small sauce pan, warm the milk slightly until lukewarm. Dissolve the yeast in it.
  • Place the flour in a large bowl, add a pinch of salt, and make a well in the center.
  • Pour the yeast-milk mixture into the well. Add the olive oil and the egg. Then, knead everything into a smooth dough.
  • Cover the dough and allow it to rise in a warm place for about 1 hour.
  • Meanwhile, peel the garlic and either press it through a garlic press or finely mince it. Wash and dry the herbs, then chop them finely.
  • Melt the butter in a small saucepan, but make sure it doesn't get too hot. Stir in the herbs, garlic, red pepper flakes, and sea salt flakes into the melted butter. Set the herb butter aside and let it cool slightly.
  • Roll out the yeast dough on a floured work surface into a rectangle about ¼ inch thick.
  • Spread the herb butter evenly over the dough, leaving about a ¾-inch border length-wise. Sprinkle the whole thing with the grated Parmesan.
  • Roll up the dough tightly from the long side. Using a sharp knife of thread, cut the roll into approximately ¾-1 inch thick slices.
  • Grease the baking pan and arrange the rolls in it, leaving some space between them. Cover them and let them rise again for about 20–30 minutes.
  • Preheat oven to 350°F. Bake the herb rolls for about 20–25 minutes, or until golden brown.
  • Let the rolls briefly cool and serve them warm.
