Quick & Easy: Our Red Cabbage Salad with Chicken Recipe
First, we’ll take care of the chicken for the salad. Heat some olive oil in a pan and fry the chicken breast fillets on both sides until lightly golden brown. Make sure the meat is cooked through. Then shred the fillets into small pieces using two forks and set them aside for later.
Next, wash and clean the red cabbage, remove the core, and cut the cabbage into thin strips. Alternatively, you can also use a grater for this. Next up are the green onions: cut them into thin rings. Then you can put the red cabbage, the green onions, and the shredded chicken into a large salad bowl.
Now it’s time for the dressing: First, zest and juice the lime. Then chop the salted peanuts. For the dressing, mix soy sauce, chili sauce, olive oil, lime juice, and zest. Pour the finished dressing over the red cabbage salad and mix everything well. Now you can serve the salad on plates and garnish it with the chopped peanuts and some fresh cilantro

Red Cabbage Salad with Chicken
Ingredients
- ⅓ cup olive oil
- 3 chicken breast fillets
- 1 lb red cabbage
- 3 green onions
- 1 organic lime
- ¼ cup salted peanuts
- 2 tbsp soy sauce
- 3 tbsp sweet chili sauce
- Some fresh cilantro for garnish
Instructions
- Heat 1 tablespoon of olive oil in a skillet and cook the chicken breast fillets thoroughly on both sides. Once ready, shred the fillets using a fork.
- Wash and clean the red cabbage, remove the core, and slice into thin strips. Peel and thinly slice the green onions. Place the red cabbage, green onions, and shredded chicken into a large bowl.
- Zest and juice the lime. Chop the peanuts. For the dressing, whisk together the lime zest, lime juice, soy sauce, sweet chili sauce, and the remaining olive oil. Pour the dressing over the salad and mix well.
- Garnish the salad with the chopped peanuts and fresh cilantro. Enjoy!
