Yield: 1
Prep Time: 15 minutes
Cooking Time: 1 hour
Difficulty Level: Easy

Ingredients:

For the pizza rolls:

  • 2 tbsp grated parmesan cheese
  • 5 ready-made sheets of pizza dough
  • tomato sauce
  • mozzarella filling
  • spinach ricotta filling
  • ham & corn filling
  • pesto, pine nuts & fresh basil to garnish

For the tomato sauce:

  • 29 oz can of tomato sauce
  • 1 tbsp oregano
  • 1 tsp garlic powder
  • salt to taste

For the mozzarella filling:

  • tomato sauce
  • 1 ball of fresh mozzarella cheese, sliced
  • 1 tbsp olive oil

For the spinach ricotta filling:

  • 1¼ cups ricotta cheese
  • 16 oz spinach, cooked
  • 1 tsp nutmeg

For the ham & corn filling:

  • ½ cup cream cheese
  • 1 red onion, sliced
  • 4 oz ham, diced
  • ⅓ cup corn kernels

1. Sprinkle the grated parmesan cheese on your work surface and place the first sheet of pizza dough on top. Combine the tomato sauce, oregano, garlic powder, and salt and spread it over the pizza dough. Divide the sheet of pizza dough into 3 even sections. Place fresh mozzarella slices on the first section of pizza dough and drizzle olive oil on top. Spread ricotta cheese over the second section of pizza dough, top with cooked spinach, and season with nutmeg. Spread cream cheese over the third section of pizza dough and top with sliced red onions, diced ham, and corn kernels. Repeat with the other 4 sheets of pizza dough.

2. Cut each section of pizza dough in half vertically so that you have 10 pizza strips with the mozzarella filling, 10 pizza strips with the spinach ricotta filling, and 10 strips with the ham & corn filling. Roll up each pizza strip so that you have 30 pizza rolls.

3. Place a cake pan on its side and start stacking the pizza rolls inside of the pan until it's completely full. Place the cake pan on on a flat surface with the top facing up, spread tomato sauce over the tops of the pizza rolls, and sprinkle grated parmesan cheese on top. Transfer the cake pan to a preheated oven and cook at 350°F for 1 hour.

4. Garnish the pizza roll pie with pesto, pine nuts, and fresh basil before serving.
