Oatmeal Pancakes Bring Variety to a Familiar Recip Breakfast Table

Pancakes are the stuff of those long-mornings, where you are hankering to spend a little bit more time at the breakfast table with loved ones. For this recipe, we are looking at approaching an old friend in a new way. We’re leaving the flour in the cupboard today and making our pancakes with oatmeal.

Opting for oats does a few things, it not only adds some fiber to your breakfast, but also with some glorious energy to the start the day off with. With this recipe, you will feel fuller for longer, your cholesterol will be lowered, and your digestion will get a head start. All before noon too!

Our oatmeal pancakes are perfect for those hungry mornings when you also need a lil’ bit of sweetness too. Our oatmeal pancakes are quick and easy to prepare, with little added sugar. With bananas mashed in, it’ll truly be love at first bite.

OATMEAL PANCAKES

  • Prep time: 5 mins
  • Cook time: 10 mins
  • Total time: 15 mins
  • Servings: 4

INGREDIENTS

  • 1 ¼ cups rolled oats
  • 2 ripe bananas
  • 1 ¼ cups milk (or plant-based milk)
  • 2 tbsp maple syrup
  • A bit of coconut oil
  • Fruit and toppings of your choice

INSTRUCTIONS

  1. In a bowl, mash bananas until smooth.
  2. Add oats, milk, and maple syrup. Mix everything into a thick batter.
  3. Heat a bit of coconut oil in a pan and use it to cook each pancake one at a time.
  4. Serve the pancakes with fresh fruit, yogurt, and/or nuts.

Notes

  • For a chocolate pancakes, simply mix 1 to 2 tbsp of cocoa powder into the batter.
