Why do we love this recipe so much? It’s extremely versatile. Depending on your taste and the season, you can adjust the dish wonderfully. Sometimes this breakfast oatmeal tastes even better topped with blueberries or strawberries, other times flax seeds and pecans might be welcome guests. The combination of banana, dark chocolate chips and coconut flakes is also something to write home about.
To make our banana oatmeal, combine the milk, a pinch of salt, and the rolled oats in a small saucepan and bring to a boil, stirring constantly. Mash half of your banana and add it to the mix with a pinch of cinnamon. Finally, simply let the oatmeal simmer over low heat until it thickens to a creamy consistency.
Divide the oatmeal between two bowls and top with sliced banana, nuts, cacao nibs and a drizzle of honey. And just like that, your new favorite breakfast is ready.
By the way: You can turn the banana oatmeal into a vegan version in no time at all. Simply replace the milk with a plant-based alternative and the honey with maple syrup.

BANANA OATMEAL

INGREDIENTS
- ½ cup walnuts
- 1 cup rolled oats
- 1 ¼ cups milk
- 1 ripe banana
- 1 pinch salt
- 1 tsp cinnamon
- 2 tsp cacao nibs
- 2 tbsp honey
INSTRUCTIONS
- Roughly chop the walnuts and toast them in a dry pan. Set aside.
- Slice half of the banana and mash the other half with a fork.
- In a small saucepan, combine the rolled oats, milk, and a pinch of salt. Bring to a boil, then reduce heat and simmer for about 5 minutes, stirring occasionally, until the oatmeal is creamy.
- Stir in the mashed banana along with a pinch of cinnamon. Mix well.
- Divide the oatmeal between two bowls. Top with the banana slices, toasted walnuts, and cacao nibs. Drizzle with honey and enjoy warm.
