Yield: 1
Prep Time: 15 minutes
Cooking Time: 2 hours 30 minutes
Difficulty Level: Moderate

For the mashed potato waffle stack:

  • pulled pork
  • mashed potato waffles
  • mashed sweet potato waffles
  • shredded mozzarella cheese
  • guacamole
  • sour cream

For the pulled pork:

  • 2 lb pork loin
  • 2 tbsp paprika
  • 2 tsp salt
  • 2 tsp pepper
  • ⅓ cup white vinegar
  • ⅔ cup tomato sauce

For the mashed potato waffles:

  • 2 lbs potatoes
  • ¼ cup corn starch
  • 2 tsp salt
  • 1 tbsp butter

For the mashed sweet potato waffles:

  • 2 lbs sweet potatoes
  • ¼ cup corn starch
  • 2 tsp salt
  • 1 tbsp butter

1. For the pulled pork, let the pork loin, paprika, tomato sauce, vinegar, salt, and pepper marinate in a casserole dish. Place the pork loin in a skillet over medium heat and briefly sear the meat on all sides. Reduce the heat to low, cover the skillet with a lid, and let cook for 2 hours 30 minutes, making sure to rotate the pork loin every so often. Let the cooked pork loin rest for 10 minutes and then shred the meat.

2. For the mashed potato waffles, peel the potatoes and boil them in slightly salted water. Mash the boiled potatoes and combine with the corn starch, salt, and butter until smooth. Spoon some of the mashed potatoes into a rectangle grid waffle maker and cook until done. Continue making mashed potato waffles until you have 6 rectangles. Repeat the process with the sweet potatoes for the mashed sweet potato waffles, also making 6 rectangles.

3. Assemble the mashed potato waffle stack in the following order: 2 mashed potato waffle rectangles, pulled pork, shredded mozzarella, 2 mashed sweet potato waffle rectangles, guacamole, sour cream. When you reach the last layer of mashed sweet potato waffles, top with a final layer of shredded mozzarella.

This mashed potato waffle stack is just what the doctor ordered. Between the mashed potatoes, sweet potatoes, pulled pork, cheese, guacamole, and sour cream it's one waffle-y delicious dish!
