A stroll through any well-stocked supermarket reveals a lion’s share of vegan and accidentally vegan products: From plant-based milks to hefty vegan patties and any number of candies. Today’s plant-based friends have a huge selection at their disposal, allowing them to rediscover the taste of beloved foods they might have thought were off the menu.

I personally follow a flexitarian diet, while my partner is primarily vegan. This means our table often features plant-based alternatives and substitutes. As we discuss taste, smell, and consistency, we often find ourselves studying the ingredient list. Some are relatively straightforward, with familiar ingredients. Others, however, require a Google search to decipher the chemical names.

In those instances, I always wonder if there’s a way to make these things myself, using more natural ingredients. And yes, there is!

That’s why we’re tackling butter today. Even though most store-bought vegan butters are good and taste great, nothing beats making your own.

Making vegan butter is super easy. All you need are a handful of ingredients. The base is flavorless coconut oil. The oil is important so that our vegan butter tastes as close to the original as possible. You’ll also need cashews, soaked in hot water for about an hour. Once softened, combine them in a blender with the coconut oil, a little olive oil, nutritional yeast, salt, a dash of apple cider vinegar, some vegan milk, and a pinch of turmeric. Blend everything until smooth. Pour the mixture into a mold, chill, and you’ve got homemade vegan butter. Spread it on your morning toast, use it in cooking and baking, and of course, above all else: Enjoy!

Homemade Vegan Butter

Ingredients
  

  • ¼ cup cashews
  • ¾ cup flavorless coconut oil
  • 1 neutral, unsweetened vegan milk such as soy milk
  • ½ tsp apple cider vinegar
  • ¾ tsp salt
  • ¾ tsp nutritional yeast
  • 1 pinch of turmeric (optional, for color)
  • ½ tbsp olive oil

Instructions
 

  • Soak cashews in hot water for an hour.
  • Melt the coconut oil and let it cool slightly. In a blender, combine coconut oil, cashews, vegan milk, apple cider vinegar, salt, nutritional yeast, and optionally: turmeric. Blend until smooth and creamy. Add olive oil and briefly blend again until combined.
  • Pour the butter mixture into a small rectangular silicone mold.
  • Refrigerate for about 2 hours until firm.

Notes

The vegan butter can be stored in the refrigerator for about 1-2 weeks.
