In most cases, it’s also an incredibl healthy start to the day. While you may only know oatmeal as a sweet dish, our savory cream cheese oatmeal proves that this breakfast staple is capable of anything.

Cream Cheese Oatmeal: Quick to Prepare & Easy to Enjoy

I admit, I am a sweet oatmeal truther. A warm bowl of oatmeal topped with fresh fruit and a bit of maple syrup has always been my go-to. But our savory cream cheese oatmeal has really changed my perspective on the dish! Maybe it will open your eyes to all the savory possibilities of the dish as well.

Our cream cheese oatmeal is wonderfully creamy, and a splash of milk really gives it a full-bodied taste. The green pesto that this recipe calls for also makes the oatmeal nice and savory, while the arugula provides a tangy freshness, and the pine nuts add a perfect bit of crunch. Our oatmeal is rounded off with an generous dollop of cream cheese, which will add an indulgent twist to the beginning of your day.

CREAM CHEESE OATMEAL

INGREDIENTS

  • 2/3 cup rolled oats
  • 1 ¾ cups milk
  • ½ cup vegetable broth
  • Salt and pepper, to taste
  • 3.5 oz arugula, about 4-5 cups fresh
  • 3–4 tablespoons green pesto, to taste
  • 6 tablespoons cream cheese
  • 2 tablespoons pine nuts
  • 2 tablespoons lemon juice

INSTRUCTIONS

  1. In a pot, bring rolled oats, milk, and vegetable broth to a boil, stirring occasionally. Reduce the heat and simmer the porridge for 7–10 minutes until it reaches desired consistency. Season with salt and pepper.
  2. As the porridge is cooking, wash and dry the arugula.
  3. Fold a handful arugula into the oatmeal, making sure it wilts slightly. Mix in a few tablespoons of pesto to taste.
  4. Split the oatmeal between two bowls, add a dollop of cream cheese to each and top with with pine nuts. Divide the remaining arugula between both bowls and drizzle a bit of lemon juice on top.
