Ready in a Jiff: Our Chicken Noodle Casserole
Casseroles are always a good idea. They come in so many different forms and flavors. Plus, casserole recipes are typically quite simple ones that only need a few ingredients. But don’t get it twisted, these meals are also typically big on flavor! And what encapsulates all the good of a casserole, than our chicken noodle casserole.
Our chicken noodle casserole is both harty with its chicken and noodle base and wonderfully creamy yet crispy with its baked cheese crust. The best part: It’s quick to prepare. If you don’t want to spend a lot of time in the kitchen, a casserole is the ideal dish. All you just have to do is cut and sauté the chicken, par-cook the noodles, and prepare the sauce. Then, simply mix all the ingredients in a dish and bake for 20 minutes. You’ll notice that casseroles are quite forgiving dishes, that come with the gift of lots of downtime!
Besides chicken and noodles, our chicken noodle casserole also includes heavy cream, vegetable broth, cheese, and spices. This makes the shopping list for the casserole very manageable. If you like, you can add little flourishes to the recipe with whatever ingredients you like.
For example, if you’re missing vegetables, you can add mushrooms, peas, broccoli, carrots, or cherry tomatoes to the sauce. Vegetables will not only add an extra edge of flavor to the dish, but a fresh twist too. Keep in mind that with extra ingredients, you may need a little more heavy cream and vegetable broth so that the casserole doesn’t dry out when baking.

Chicken Noodle Casserole
Ingredients
- 11 oz noodles
- 2 garlic cloves
- 4 boneless chicken breasts
- 2 tbsp olive oil
- salt & pepper
- ¾ cup heavy cream
- 1 cup vegetable broth
- 3½ oz shredded Swiss cheese
- parsley optional
Instructions
- Preheat oven to 400°F.
- In a pot of boiling salted water, par-cook the noodles for about 5 minutes, only until they are still very al dente. Drain and set aside.
- Peel and mince the garlic. Rinse the chicken breast fillets, pat them dry, and cut into approximately ¾-inch pieces. Remove any tendons.
- Heat the olive oil in a skillet. Sauté the garlic until translucent, then add the chicken. Cook for 5 minutes until golden brown. Season with salt and pepper.
- Deglaze the pan with the heavy cream and vegetable broth and let the sauce simmer for about 6 minutes over medium heat.
- Spread the noodles in the casserole dish and pour the sauce evenly over them. Season once more with salt and pepper.
- Finally, top the shredded cheese on top and bake for about 20 minutes. The casserole is ready when the cheese is golden brown.
- Remove the casserole from the oven, portion it onto plates, and sprinkle with chopped parsley.
