How to Make Perfect Cherry Vanilla Turnovers

Our decadent cherry vanilla turnovers can be made for a variety of occasions, as dressed or as dressed down as you like. A la mode with a scoop of vanilla ice cream will make for a great dessert, for example. But they’re also perfect with an afternoon cup of coffee. Or you can pack them up and take them with you as a snack for on the go.

It really is super easy to bake these little treats. You don’t need many ingredients and most of it almost takes care of itself. Start by preparing the cherry filling: All you need to do is add a little cornstarch to a basic instant vanilla pudding mix and then simply make it according to package instructions. Now, cut your pre-made puff pastry into small squares. After that, all you have to do is prepare the puff pastry into small squares, which you will later fold into your cherry pastries.

Place the two fillings in the center of the dough, fold it up and then the pop them straight into the oven. If you have an air fryer, the turnovers can bake for eight to twelve minutes at 350°F. Make sure to, well, turn them over once halfway through.

I’m an absolute fan of the dark chocolate-cherry-vanilla mix and can only recommend that you top the cherry vanilla pastries with a little chocolate. You can even really play with flavor and texture here: Give these turnovers a chocolate glaze once they’ve cooled down a bit. Or if you’re a chocolate-affine, go full monty and dunk those babies right into some melted chocolate. However you do it: Live deliciously!

Cherry Vanilla Turnovers

Ingredients
  

  • 1 jar sour cherries
  • 2 tbsp cornstarch
  • 1 package instant vanilla pudding mix
  • cups milk
  • 2 tbsp sugar
  • 1 egg
  • 1 package (10 oz) puff pastry refrigerated
  • ½ cup dark chocolate optional
  • 2 tbsp butter optional

Instructions
 

  • Drain the sour cherries and collect the juice in a bowl. Take a little of the cherry juice and mix it with the cornstarch. Bring the remaining cherry juice to a boil in a saucepan and add the cherry juice-cornstarch mixture. Cook until thickened, then fold in the cherries and let the mixture cool.
  • Prepare the vanilla pudding mix with milk and sugar according to the package directions and let the finished pudding cool.
  • Whisk the egg in a bowl.
  • Preheat oven to 400°F. Spread the puff pastry on a baking sheet and cut into 8 even squares.
  • Place a spoonful of pudding and cherry mixture in the center of each square.
  • Fold the squares diagonally into triangles. Press the edges firmly with a fork. Brush the surface with the egg.
  • Bake your turnovers for 15-20 minutes, or until golden brown.
  • Once the cherry pastries have cooled slightly, melt the chocolate with the butter in a double boiler and brush the finished pastries with the glaze as desired.
