Cheesy Rainbow Bell Pepper Strudel

You'll Need:

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 3 medium potatoes
  • 3 tbsp cream cheese, divided
  • 3 tbsp grated parmesan cheese, divided
  • 3 large eggs, divided
  • salt & pepper to taste
  • 1 puff pastry sheet
  • 16-20 slices of prosciutto 
  • 24 oz halloumi cheese, cut into strips
  • ⅓ cup pesto
  • 1 whisked egg for the egg wash

Here's How:

1. Remove the cores from the bell peppers, roast them, let them cool slightly, carefully remove the skins, and puree each colored bell pepper separately. Boil the potatoes in lightly salted water, let them cool slightly, and carefully remove the skins. Pass the potatoes through a potato ricer and divide the mixture into 3 equal portions. Add 1 riced potato portion, 1 tbsp cream cheese, 1 tbsp grated parmesan cheese, and 1 egg to each colored bell pepper puree, season with salt and pepper, and mix until combined. Spoon each colored bell pepper mixture into a separate piping bag.

2. Make diagonal cuts in the sheet of puff pastry at regular intervals on both sides, making sure to leave the middle untouched.

3. Place 8-10 slices of prosciutto down the center of the puff pastry sheet so that they overlap.

4. Pipe the yellow bell pepper mixture, green bell pepper mixture, and red bell pepper mixture down the center of the puff pastry sheet and fill the gaps with strips of halloumi cheese.

5. Pipe more of the colored bell pepper mixtures on top of the halloumi cheese strips, fill the gap between the 2 bell pepper lines with more halloumi cheese strips, and fold the prosciutto slices up over the filling.

6. Cover the filling with the remaining prosciutto slices, making sure to tuck the ends under the filling.

7. Brush pesto over the puff pastry dough on either side of the filling and fold the dough ends over the filling.

8. Fold the puff pastry strips over the filling, making sure to twist them as you fold them in towards the center.

9. Brush the egg wash over the puff pastry dough and place the cheesy rainbow bell pepper strudel on a baking tray. Transfer the pan to a preheated oven and cook at 350°F for 35-40 minutes.
