4 Grilled Puff Pastry Pockets | Watermelon Steak, Pineapple Pulled Pork, Apple Bacon, And Mango Chicken

One of our favorite ingredients to work with is puff pastry. It's one of the most versatile ingredients out there, and it always tastes great, no matter how simple or complex the recipe. Despite having cooked puff pastry in tons of different ways, it never occurred to us to try puff pastry on the grill – until now! These 4 stuffed puff pastry pockets all combine the sweet, fresh flavor of grilled fruit; smoky, tender meat; and ooey, gooey melted cheese. These puff pastry pockets are all grilling gold!

1. Watermelon, Steak & Feta Pastry Pocket

You'll Need:

  • steak strips
  • chopped watermelon
  • 1 puff pastry sheet
  • crumbled feta cheese
  • 1 egg for the egg wash
  • ¼ stick melted butter
  • 2 tbsp brown sugar

Here's How:

1.1 Light the grill and wait for it to heat up. Skewer a few pieces of chopped watermelon on a wooden skewer and stir together the melted butter and brown sugar. Brush the melted butter mixture over the skewered watermelon, transfer the watermelon and steak strips to the grill, and grill on both sides until the steak is cooked all the way through and the watermelon begins to brown slightly.

1.2 Unroll the sheet of puff pastry dough on a clean work surface and cut it into squares. Place the grilled steak, crumbled feta, and grilled watermelon in the center of 1 square of dough. Whisk 1 egg and brush the egg wash over 2 adjacent edges of the puff pastry dough.

1.3 Fold the uncovered edges of puff pastry dough over the filling to meet the edges covered in egg wash, and use a fork to press down along the edges to seal the dough. For the best results, transfer the puff pastry pocket to the freezer and freeze for 1 hour.

1.4 If the grill isn't already hot, light it again and wait for it to heat up. Grill the stuffed puff pastry pocket on indirect heat for about 8 minutes on each side.

2. Pineapple, Pulled Pork & Provolone Pastry Pocket

You'll Need:

  • chopped pineapple
  • marinated pulled pork
  • 1 puff pastry sheet
  • slices of provolone cheese
  • 1 egg for the egg wash
  • ¼ stick melted butter
  • 2 tbsp brown sugar

Here's How:

2.1 Light the grill and wait for it to heat up. Skewer a few pieces of chopped pineapple on a wooden skewer and stir together the melted butter and brown sugar. Brush the melted butter mixture over the skewered pineapple and place the marinated pulled pork in a small cast iron skillet. Transfer the pineapple and cast iron skillet to the grill and grill everything until the pineapple beings to brown slightly and the pulled pork is cooked all the way through.

2.2 Unroll the sheet of puff pastry dough on a clean work surface and cut it into squares. Place the pulled pork, slices of provolone, and grilled pineapple in the center of the dough. Whisk 1 egg and brush the egg wash over 2 adjacent edges of the puff pastry dough.

2.3 Fold the puff pastry dough over and press down along the edges using a fork to seal the dough. For the best results, transfer the puff pastry pocket to the freezer and freeze for 1 hour. Grill the puff pastry for about 8 minutes on both sides.

3. Apple, Bacon & Gouda Pastry Pocket

You'll Need:

  • thick-cut bacon, sliced
  • sliced apples (e.g Granny Smith)
  • 1 puff pastry sheet
  • slices of Gouda cheese
  • 1 egg for the egg wash
  • ¼ stick melted butter
  • 2 tbsp brown sugar

Here's How:

3.1 Light the grill and wait for it to heat up. Skewer a few pieces of sliced apples on a wooden skewer and stir together the melted butter and brown sugar. Brush the melted butter mixture over the skewered apples, transfer the apples and thick-cut bacon to the grill and grill on both sides until the bacon is cooked all the way through and the apples start to brown slightly.

3.2 Unroll the sheet of puff pastry dough on a clean work surface and cut it into squares. Place the bacon, slices of Gouda, and grilled apples in the center of the dough. Whisk 1 egg and brush the egg wash over 2 adjacent edges of the puff pastry dough.

3.3 Fold the edges of puff pastry dough over and press down along the edges using a fork to seal the dough. For the best results, transfer the puff pastry pocket to the freezer and freeze for 1 hour. Grill the puff pastry for about 8 minutes on both sides.

4. Mango, Pulled Chicken & Cheddar Pastry Pockets

You'll Need:

  • chopped mango
  • marinated pulled chicken
  • 1 puff pastry sheet
  • slices of cheddar cheese
  • ¼ stick melted butter
  • 2 tbsp brown sugar
  • 1 egg for the egg wash

Here's How:

4.1 Light the grill and wait for it to heat up. Skewer a few pieces of chopped mango on a wooden skewer and stir together the melted butter and brown sugar. Brush the melted butter mixture over the skewered mango and place the marinated pulled chicken in a small cast iron skillet. Transfer the mango and cast iron skillet to the grill and grill everything until the mango beings to brown slightly and the pulled chicken is cooked all the way through

4.2 Unroll the sheet of puff pastry dough on a clean work surface and cut it into squares. Place the pulled chicken, slices of cheddar, and grilled mango in the center of the dough. Whisk 1 egg and brush the egg wash over 2 adjacent edges of the puff pastry dough.

4.3 Fold the edges of puff pastry dough over the filling to meet the edges covered in egg wash and press down along the edges using a fork to seal the dough. For the best results, transfer the puff pastry pocket to the freezer and freeze for 1 hour. Grill the puff pastry for about 8 minutes on both sides.
