The perfect addition to any barbecue: Cauliflower BBQ bites

When we think of barbecues, we normally think about meat — and lots of it! Steaks, burgers, hot dogs, chicken... the list goes on. But in recent years there's been a new trend involving grilled vegetables, and why not? Grilled red peppers, onions, and carrots can make a tasty side dish for any meal. But here's one you might not have thought of: cauliflower! Try out this recipe the next time you fire up the grill and add a bit of (cauli)flower power to your barbecue...

You'll need:

  • 1 head of cauliflower
  • 1 cup flour
  • 3 eggs, beaten
  • 4 cups breadcrumbs

For the sauce:

  • 1 cup BBQ sauce
  • 1/2 cup brown sugar
  • pepper
  • 1/2 a lemon
  • 1 garlic clove, finely chopped

Here's how:

  1. Break up the head of cauliflower into small florets. Dunk the florets in the flour, then the egg, and then the breadcrumbs. Bake for 20 minutes at 355 F.
  2. Mix the sugar, pepper, garlic, and a squeeze of lemon into the BBQ sauce and heat it up in a pot.
  3. Mix the baked cauliflower bites into the warm BBQ sauce and serve with a dip, e.g. ranch dressing.

These bitesize treats are sure to be a hit, so always make a big batch when you're having friends over for a barbecue. And don't be surprised when they forget about the steak and burgers and think that this is the main course... Yes, they really are that good!
