When we think of barbecues, we normally think about meat — and lots of it! Steaks, burgers, hot dogs, chicken… the list goes on. But in recent years there’s been a new trend involving grilled vegetables, and why not? Grilled red peppers, onions, and carrots can make a tasty side dish for any meal. But here’s one you might not have thought of: cauliflower! Try out this recipe the next time you fire up the grill and add a bit of (cauli)flower power to your barbecue…

Cauliflower BBQ Bites

Ingredients
  

  • 1 head cauliflower
  • 1 cup flour
  • 3 eggs, beaten
  • 4 cups breadcrumbs
  • 1 cup BBQ sauce
  • 0.5 cup brown sugar
  • 1 clove garlic, finely chopped
  • 0.5 lemon
  • 1 tsp pepper

Instructions
 

  • Break up the head of cauliflower into small florets. Dunk the florets in the flour, then the egg, and then the breadcrumbs. Bake for 20 minutes at 355 F.
  • Mix the sugar, pepper, garlic, and a squeeze of lemon into the BBQ sauce and heat it up in a pot.
  • Mix the baked cauliflower bites into the warm BBQ sauce and serve with a dip, e.g. ranch dressing.
