Carrot Omelette
Ingredients
- 1 cup carrots
- 6 eggs
- salt & pepper
- 5 mint sprigs
- ¼ cup olive oil
- 2 oz ham sliced, optional
Instructions
- Peel the carrots and cut them into large pieces. Then put them in a food processor or chop them finely with a knife.
- Whisk the eggs and season with salt and pepper.
- Chop the mint.
- Heat the olive oil in a pan, then sauté the carrots for 8 minutes. Season with salt and pepper to.
- Pour the eggs over the carrots. Let them set slightly.
- Using a spatula or spoon, push the edges of the omelette into the center several times.
- Cover the pan and let the carrot omelette set for another 3 minutes.
- Serve the omelette with the chopped mint and ham.
