Baking Sweet Cappuccino Cupcakes

Cupcakes make for such a good dessert. They’re perfectly bite sized and can be dressed up and down as you like. We’re personally always delighted to whip up twelve little cakes and with enough practice, it really does become child’s play making them. Sure, frosting them takes some practice, but once you’ve done it a couple of times, it’s a breeze. You can either use a piping bag or apply the sweet topping with a spoon or spatula. Either way, these cappuccino cupcakes are a real treat.

We use instant cappuccino mix in both the batter and the frosting of these cappuccino cupcakes to give them their distinct coffee flavor. Other than that, we use common baking ingredients like flour, sugar, eggs, and so on to make these delights. The batter is quick to mix and easy to pour. While the cupcakes are baking in the oven, you’ll have plenty of time to prepare the remaining ingredients for the creamy frosting.

Let the cupcakes cool slightly after baking so the frosting doesn’t melt when you apply it. If you’re hosting, then arrange the cappuccino cupcakes on a cake plate or tiered stand for a beautiful presentation. Each guest can then take as many little cakes as they like. Warning: They’re so delicious, they’ll be gone before you know it!

Ingredients
  

For the cupcakes:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ cup sugar
  • 2 tsp vanilla extract
  • tbsp instant cappuccino mix
  • ¾ cup milk
  • 2 tbsp vegetable oil
  • 2 eggs

For the frosting:

  • 1 cup heavy cream cold
  • tsp cornstarch
  • tsp powdered sugar
  • 2 tsp vanilla extract
  • 1 tbsp instant cappuccino mix

Instructions
 

  • Preheat the oven to 375°F.
  • In a bowl, sift the flour and baking powder together. Add the sugar, vanilla extract, and the cappuccino mix. Stir well.
  • Pour in the milk and oil, beat in the eggs, and mix until smooth.
  • Grease a muffin tin, pour in the batter, and bake for 20-25 minutes.
  • Meanwhile, prepare the frosting: Beat the heavy cream with cornstarch, sugar, vanilla extract, and cappuccino mix until stiff. Once ready, frost the cooled cupcakes.
