Breakfast Tomato – Scrambled Eggs Just Got A Makeover

When it comes to beloved dishes that can be easily whipped up, scrambled eggs are always on the menu. As far as flavor goes — no complaints here! When it comes to presentation however, things get a little more tricky. With this recipe, your favorite eggs come served in a pretty (and delicious!) new package.

You'll Need (for 2 portions):

  • 2 medium-sized tomatoes
  • 2 eggs
  • 2 tbsp milk
  • salt & pepper
  • 1/3 cup grated parmesan

Here's How:

  1. Cut off the top part of each tomato and hollow them out out using a knife and spoon.
  2. Beat the eggs in a bowl, mixing in the milk, cheese, salt and pepper. 
  3. Pour the eggs into the tomatoes and bake for 30 minutes at 390 °F.

When a breakfast dish is this yummy, the extra step is certainly worth it. If you're feeling creative, feel free to experiment with different ingredients: perhaps a different cheese or a sprig of rosemary, oregano, or basil. Let your imagination run wild. Enjoy!
