A Cup of Simplicity: Our Banana Mug Cake

Mug cakes are certified spirit lifters. They are so easy to prepare, make for a perfect little bite, and are ready in just a few minutes.

And this banana mug cake doesn’t come from a box, of course. But, no need for an extensive trip to the grocery! You only need a handful of pantry ingredients for this tiny cake, and you probably already have them on hand!

The most important ingredient is, who would have thought it, a ripe banana. Otherwise, you only need some margarine, flour, baking powder, milk, or a plant-based alternative of your choice. You can also elevate the cake’s flavor with a bit of cinnamon and chocolate chips. So what are you waiting for? Let’s get baking. It’s not every day that a homemade cake is so easy, and so quick, to make!

Start by mashing the banana and melting the margarine. You don’t have to mash the banana super neatly into a puree, by the way. Do keep in mind, the more mashed the banana is, the denser the cake will be. If the batter remains a little chunky, no worries, it’s all a matter of taste!

Once you have the banana-mash ready, simply mix all the ingredients together. If desired, fold in the chocolate at the end. Pour the batter into a microwave-safe mug and bake the cake at 800 watts for 60-90 seconds. We reccomend microwaving the cake in 30-second intervals, so that you can regularly check if the cake is ready without worry of over’cooking’ it. Enjoy!

Ingredients
  

  • 1 ripe banana
  • 1 tbsp margarine
  • ¼ cup all-purpose flour
  • ¼ tsp baking powder
  • ½ tsp cinnamon
  • 3 tbsp milk
  • ¼ cup chocolate chips or chopped chocolate

Instructions
 

  • Using a fork, mashed the peel banana. Meanwhile, melt the margarine in a mug in the microwave.
  • In a bowl, combine the flour, baking powder, cinnamon, mashed banana, margarine, and milk. Finally, fold in the chocolate chips.
  • Pour the batter into a microwave-safe mug and bake for 60-90 seconds at 800 watts. For best results, cook the banan mug cake in 30-second intervals, check in between to see if it's fully set.
