An Easy Recipe for Banana Condensed Milk Cake

The magic of this recipe lies in its simplicity. All you need are ripe bananas, which you mash with a fork, sweet condensed milk, which gives the cake its characteristic moistness, as well as eggs, flour, sugar, butter, and some baking powder to make the batter. Optionally, you can add vanilla extract or vanilla bean paste, or a pinch of cinnamon to refine the cake’s flavor.

To prepare the cake, all you need to do is mix all the ingredients into a smooth batter and pour it into a springform pan. Now all that’s left is popping the cake into the oven for 45 minutes. Once ready, let it properly cool and cover it with a lemon glaze.

Banana cakes are also a great way to use overripe bananas. They make the batter especially moist and aromatic. Plus, thanks to their natural sweetness, you often need to use less refined sugar in baked goods with bananas.

Equipment

  • 1 (9-in.) springform pan

Ingredients
  

For the batter:

  • 2 cups all-purpose flour
  • ½ tsp salt
  • tsp baking powder
  • 3 very ripe bananas (about 1 cup mashed)
  • ½ cup sugar
  • ½ cup softened butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sweetened condensed milk

For the glaze:

  • 1 cup sugar
  • 2-3 tbsp milk
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions
 

  • Preheat oven to 350°F. Grease and flour a 9-inch springform pan.
  • In a bowl, whisk together flour, salt, and baking powder.
  • Mash bananas and set aside.
  • In a bowl, cream the sugar and butter until light and fluffy. Beat in eggs one at a time.
  • Add mashed bananas, vanilla extract, and condensed milk.
  • Fold in dry ingredients until just combined.
  • Pour the batter into prepared pan and bake for 45 minutes.
  • Let cool in pan for 10 minutes before inverting onto a wire rack.
  • Whisk glaze ingredients together and pour over the cooled cake.

Notes

If the batter is too dry, modify it with a little more butter.
