How to Make Oven-Baked Teriyaki Chicken
If sushi is the only thing that comes to mind when you think of Japanese cuisine, it’s time to discover the deliciousness of teriyaki chicken. The meat is marinated in a glossy, sweet-savory sauce and then cooked to lock in all the flavor. Despite how well-loved teriyaki sauce is, it is still murky as to when exactly it was first created. But it is assumed that the glaze traces its roots back as early as 17th century Japan, when it was supposedly used to give its signature spicy-sweet aroma to meat and fish-based dishes.
For our teriyaki chicken, you’ll be mixing the sauce yourself. To do this, you combine soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, cornstarch, and water in a large bowl. Add the chicken pieces and let them marinate for ten minutes, so that they really soak in the flavor.
Then spread the meat on a baking sheet lined with parchment paper and bake it for about 25 minutes in a preheated oven. Let the meat cool briefly and then sprinkle it with sesame seeds and some of the scallion.

Oven-Baked Teriyaki Chicken
Ingredients
- 11 oz chicken breast fillets
- 1 tsp ginger
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 1 garlic clove
- 1 tsp rice vinegar
- 1 tsp cornstarch
- 1 tbsp water
- 1 tbsp sesame seeds
- 2 scallions
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Cut the chicken into bite-sized pieces. Grate the ginger.
- Whisk together soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, cornstarch, and water to make a marinade.
- Add the chicken pieces to the marinade and let them sit for at least 10 minutes.
- Spread the chicken pieces on the baking sheet and bake for about 20–25 minutes. Turn the chicken pieces once halfway through.
- After baking, sprinkle the chicken pieces with sesame seeds and the chopped green parts of the scallions and serve with rice and vegetables of your choice.
