Because when hunger or appetite takes over, it has to be quick and it has to be filling. Sometimes there just isn’t time or energy to marinate a steak overnight and slowly cook it in the smoker. That’s why we’ve come up with something that’s at least as delicious, but takes much less time. Namely, our zucchini salmon skewers!
Bonus point: The skewers are perfect if you’re looking for a balanced diet. Salmon is full of valuable protein and omega-3 fatty acids, while the vegetables provide a mix of freshness and nourishing vitamins. To add a rich flavor, simply briefly marinate the whole thing in a mixture of lemon juice, honey, and spices. And off to the grill it goes!
The great thing about zucchini salmon skewers: They can be easily modified. For example, you’re completely free to choose the marinade. Zucchini Salmon Skewers
Equipment
- 1 Grill
- Skewers
Ingredients
- 14 oz fresh salmon fillet
- 2 zucchini
- 7 oz cherry tomatoes
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1 tsp dried thyme
- salt & pepper to taste
Instructions
- Cut the salmon into bite-sized cubes.
- Halve the zucchini lengthwise and cut into thick slices. Leave the cherry tomatoes whole.
- Peel and finely chop the garlic, or, run it through a garlic press.
- For the marinade, combine olive oil, lemon juice, honey, garlic, thyme, salt, and pepper in a bowl.
- Place the salmon, zucchini, and cherry tomatoes in the marinade. Let sit for about 30 minutes.
- Thread the ingredients alternately onto wooden or metal skewers.
- Grill the skewers for about 8-10 minutes, until the fish is cooked through and the vegetables tender. Turn regularly while grilling.
- Serve the skewers directly hot off the grill.
