Fried and crispy gnocchi mixed with crunchy yet refreshing cucumber and drenched in a fresh yogurt dressing truly makes this side dish truly shine. Our cucumber-gnocchi salad only requires a few, but select ingredients and a few just as simple steps. We often opting fresh gnocchi from the supermarket, but prepacked will do just as well. Either way, you’ll want to make sure you fry it up nicely in a flavorful olive oil! Next you’ll need cucumber, which provides the crunchy note in the salad. All you need to do is cimply cut into thin slices. Make sure you have onions and garlic on hand, which you’ll cut into strips and grate finely respectively.

To make the dish’s signature creamy dressing, simply mix yogurt, garlic, salt, pepper, lemon juice, mustard, and dill together. Afterwards, in your serving bowl, you’ll mix the cucumber, onion, and dressing together and spread the warm, crispy gnocchi on top.

Of course, the recipe for our cucumber-gnocchi salad is not set in stone. You can vary it again and again by adding other ingredients. Finely chopped lettuce, small cherry tomatoes and/or bell peppers, for example, make for wonderful additions to the dish.

Ingredients
  

  • 2 tbsp olive oil
  • cups fresh gnocchi
  • 1 cucumber
  • 1 small red onion
  • 1 garlic clove
  • ¾ cup plain yogurt 3.5% fat
  • 1 tsp mustard
  • 2 tbsp lemon juice
  • 2 tbsp fresh dill chopped
  • salt & pepper to taste

Instructions
 

  • Heat a tablespoon of olive oil in a large skillet. Fry the gnocchi over medium heat for 6–8 minutes until golden brown and crispy.
  • Wash the cucumber and cut it into thin slices. Peel the onion and cut it into thin strips. Peel the garlic clove and grate it finely.
  • In a bowl, combine the yogurt with mustard, lemon juice, dill, garlic, salt, pepper, and the remaining olive oil to make the dish's creamy dressing.
  • Mix the dressing with the cucumbers and onions.
  • Spread the still-warm gnocchi on top and serve the salad immediately.
