While chocolate and breakfast may seem like too much for a weekday, we assure you that this oatmeal is the right choice!

Oatmeal is one of those easy breakfast fixes, and it’s impossible to ignore the health benefits that come with it: Rolled oats are an excellent source of fiber and contain many important nutrients such as iron, magnesium, and zinc. When combined with chocolate, what may have otherwise been a balanced, yet boring, meal is transformed into a sweet delight that you can rest assured is wholesome nonetheless.

CHOCOLATE OATMEAL

INGREDIENTS

  • 1 cup rolled oats
  • 2 teaspoons unsweetened cocoa powder
  • Pinch of salt
  • 2 cups milk or plant-based milk
  • 2 teaspoons maple syrup
  • ½ teaspoon vanilla extract
  • 2 teaspoons finely chopped chocolate
  • 1 ⅓ cups cottage cheese
  • Fresh fruit of choice, for serving

INSTRUCTIONS

  1. Place the rolled oats, milk, and a pinch of salt in a saucepan over medium heat. Cook, stirring constantly.
  2. Next add the maple syrup, vanilla extract, and cocoa powder. Let the chocolate oatmeal simmer for about 5-10 minutes until it reaches a creamy consistency. Finally, stir in the chopped chocolate.
  3. In a separate bowl, stir together the cottage cheese and yogurt until well combined. Spoon the warm chocolate oatmeal over the mixture.
  4. Finally, top the oatmeal with your choice of fruit. Your delicious, chocolatey breakfast is ready.
