Coconut-Apricot Bars: Always a Good Idea
Whether as a snack, with afternoon coffee, or as an office treat: Our coconut-apricot bars taste amazing and always impress! They are easy to transport and can be made ahead of time, as they stay fresh in the refrigerator for several days. Conveniently, you don’t even need an oven: With a healthy bit of chilling, these bars are ready to rock.
Our coconut-apricot bars are not only easy to make, but are also packed with valuable nutrients. Rolled oats, dried apricots, coconut flakes, and ground almonds are not only filling, but also nutritious. A crisp coating of wonderful white chocolate provides that fun, indulgent factor to the whole ordeal.
One thing that may be a little freaky to you, is that our recipe asks you to soak your apricots in orange juice or apple juice. Rest assured, this has a purpose. Soaking will make your your apricots nice and juicy, and their fruity aroma will also be particularly well-enhanced by all of this.
Apricots give the bars a nice texture and sweeten the bar without any added sugar. If you so please, you can also adjust the recipe to your dried fruit of taste. Dried plums, for example, would certainly work well, too. And vegans can join in the snacking too if you opt for vegan chocolate and swap out honey for maple syrup.

COCONUT APRICOT BARS

Necessary tools
- 1 baking pan, 8 x 8 inches
INGREDIENTS
- 6–7 oz dried apricots (about 0.4 lb)
- ½ cup orange or apple juice, for soaking
- ¾ cup rolled oats
- ¾ cup unsweetened coconut flakes
- ¾ cup ground almonds
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 pinch salt
- 5–6 oz white chocolate (about 0.35 lb), for coating
INSTRUCTIONS
- Cut the dried apricots into small pieces and place them in a bowl. Pour the orange or apple juice over them and let them soak for around 30 minutes.
- Drain the apricots well and chop them finely.
- In a bowl, combine the chopped apricots, rolled oats, coconut flakes, ground almonds, honey, vanilla extract, and a pinch of salt. Mix well until a moldable, slightly sticky dough forms.
- Press the apricot-coconut mixture evenly into a parchment-paper lined pan and smooth the surface so that the bars have a uniform height.
- Let the bars firm by chilling in the fridge for around 15 minutes.
- Chop your white chocolate into small pieces and melt it over a hot water bath until smooth and liquid.
- Pour the melted white chocolate over the chilled apricot-coconut mixture and spread evenly. Return the pan to the refrigerator and chill until the chocolate is firm.
- Once the chocolate is stiff, remove the mixture from the pan and cut it into even bars.
