How to Make Flourless Pancakes
There are many reasons why someone might need to cut, or cut back, on flour. Whether it’s due to cutting carbs, an intolerance, or simply running out: You don’t have to miss out on a delicious breakfast! Instead of flour, this recipe uses rolled oats.
To begin, you need to grind your rolled oats as finely as possible. This is best done in a food processor or with good blender. But, if you so wish, you can leave the oats coarsely ground to add a little texture to the batter. On the other hand, the finer the flakes, the fluffier your pancakes will be. We’ll leave the choice up to you!
There are a few other tricks to this recipe: baking powder and sparkling water help the batter rise by adding aeration, giving it a light and fluffy texture. For toppings, let your creativity run wild. We opted for bananas, some chopped walnuts, and, of couse, maple syrup. What can we say! Some things are a classic for reason. Of course, you can use any fruit you like. Whether it’s berries, apples, or peaches: everything tastes delicious!
You can also easily make these pancakes savory. Simply replace the sugar with a pinch of salt instead. Then you can top your pancakes with cream cheese, sour cream, or another delicious sauce, maybe even salsa or a pancakes benedict? We’re already salivating.

FLOURLESS PANCAKES

INGREDIENTS
- ½ cup gluten-free rolled oats
- 2 tbsp sugar
- 1 tsp baking powder
- 1 cup milk
- 2 eggs
- 3 tbsp oil
- ¼ cup sparkling water
- 1 banana
- 1 cup walnuts, chopped
- Maple syrup
INSTRUCTIONS
- Place the rolled oats in a blender and grind them as finely as possible. Add sugar and baking powder.
- In a separate bowl, whisk the milk and eggs together for 5 minutes. Add the wet to the dry ingredients and let it sit for a few minutes.
- In a pan, heat the oil over medium heat. Add the sparkling water to the batter and mix well. This will make the batter nice and fluffy.
- Pour 1 to 2 tablespoons of batter into the pan and cook the pancakes. After a few minutes, flip them until they are golden brown on both sides.
- Slice the banana and top the pancakes with them. Drizzle with syrup and top with chopped walnuts.
