1. Ice Cream Filled Cake
- 1 chocolate cake
- handful of berries
- 4-6 scoops vanilla ice cream
1.1 Turn the cake upside down and hollow it out with a spoon. Set the inside of the cake aside for now.
1.2 Put 2 scoops of vanilla ice cream into the hollow and smooth it down.
Bonus Recipe: Easy Homemade Vanilla Ice Cream
- 14 oz sweetened condensed milk
- 2 cups heavy cream
- 1 tbsp vanilla extract
Add the sweetened condensed milk to a 50 oz container and add the vanilla extract. Whip the heavy cream until stiff and fold it into the condensed milk. Now just freeze the container.
1.3 Add some mixed berries and another 2 scoops of vanilla ice cream and smooth it down again.
1.4 Crumble the cake insides from the first step and sprinkle the crumbs over the ice cream. Press everything together firmly, turn the ice cream cake over, and serve.
2. Ice Cream Cookie Sandwich
- 2 large cookies
- 1 pint vanilla ice cream
- strawberry sauce
2.1 Cut out a slice of ice cream from the container together with the packaging.
2.2 Remove the packaging from the ice cream slice and place the ice cream on top of one cookie. Spread 1-2 tablespoons of strawberry sauce on top of the ice cream and then place the second cookie on top. And there's your ice cream cookie sandwich!
Bonus Recipe: Homemade Chocolate Chip Cookies
- 2½ cups flour
- 1⅔ cups powdered sugar
- 1¾ sticks butter, room temperature
- 2 eggs
- 1 tsp vanilla extract
- 1 pinch salt
- 1 pinch sugar
- 2 tsp baking powder
- 6 oz semi-sweet chocolate chips
- 4 tbsp milk
- 4 oz white chocolate, chopped
Preheat the oven to 350°F. In a bowl, whisk the butter, powdered sugar, and vanilla extract until frothy. Add the eggs one by one and continue to whisk everything until you get a creamy consistency. Mix the flour and baking powder and add the mixture along with the milk and salt to the dough. Now stir in the chocolate chips and the chopped white chocolate. Line a baking tray with parchment paper, form the dough into small balls on the pan, and press them down with a spoon. Bake the cookies for 15-20 minutes.
3. Spaghetti Ice Cream
- potato ricer
- 5-6 scoops vanilla ice cream
- 4-5 tbsp strawberry sauce
- 3-4 Ferrero Rocher chocolate balls
- white chocolate
3.1 Transfer the ice cream to the potato ricer and squeeze it out over a plate.
3.2 Garnish the spaghetti ice cream with a few Ferrero Rocher chocolate balls and some strawberry sauce. To finish, grate some white chocolate over the top.
4. Colorful Ice Cream Cake
- springform pan
- 8-10 scoops strawberry ice cream
- 8-10 scoops pistachio ice cream
- 8-10 scoops blueberry ice cream
Freeze the springform pan before you start making the actual ice cream cake so the ice cream doesn't melt too quickly later. Then alternately add all three types of ice cream into the pan and smooth it down. Repeat this process with another layer of ice cream. Finish by sprinkling a handful of M&M's on top and you're done!
