4 Easy One-Pot Meals

One-pot meals have been all the rage for a while now, and it's no wonder why! Making a delicious meal without all the hassle of multiple dishes and annoying cleanup is every home chef's dream. Maybe you already have a go-to recipe or two that you like to use, but nothing compares to these 4 hearty, delicious one-pot meals. Quick, easy, and barely any dishes – there's no reason not to try all 4. They're so good you'll even lick your plate clean, too!

1. One-Pot Baked Feta Zoodles

Yield: 1
Prep Time: 10 minutes
Cooking Time: 15 minutes
Difficulty Level: Easy

Ingredients:

  • 4 oz cherry tomatoes
  • 4 oz feta cheese block
  • 2 small onions
  • 1 small red onion
  • ½ head of garlic
  • 2 tbsp olive oil
  • salt & pepper to taste
  • 2 zucchinis, sliced
  • tomato wedges, crumbled feta cheese & fresh herbs to garnish

Instructions:

Add the cherry tomatoes, feta cheese, onions, red onion, and garlic to a casserole dish and season with olive oil, salt, and pepper. Transfer the casserole dish to a preheated oven and cook at 350°F for 15 minutes. Remove the casserole dish from the oven, squeeze the roasted garlic out of the skin, and mash the ingredients into a smooth and creamy sauce. Slice the zucchinis into long, thin strips and mix them together with the sauce. Garnish the baked feta zoodles with tomato wedges, crumbled feta cheese, and fresh herbs before serving.

2. One-Pot Mac & Cheese

Cooking Time: 30 minutes
Difficulty Level: Easy

Ingredients:

  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup heavy cream
  • ¼ cup crispy fried onions
  • 8 oz cooked pasta
  • 6 slices of bacon
  • sliced green onions to garnish

Instructions:

Add the shredded cheddar cheese, shredded mozzarella cheese, heavy cream, crispy fried onions, and cooked pasta to an ovenproof pan or skillet and mix to combine. Transfer the pan to a preheated oven, hang the raw bacon strips over the oven rack directly above the pan, and cook at 350°F for 15 minutes. Remove the pan and the cooked bacon strips from the oven, let the pasta sit for 5 minutes, crumble the bacon strips over the pasta, and garnish the mac & cheese with sliced green onions before serving.

3. One-Pot Pulled Chicken Sandwich

Ingredients:

  • yeast dough
  • ½ yellow bell pepper, sliced
  • ½ red onion, sliced
  • ½ green chili, sliced
  • 1 chicken breast
  • 3 tbsp BBQ sauce
  • fresh herbs to garnish

Instructions:

Shape the yeast dough into an oval shape and place it on one side of a casserole dish. Add the sliced bell peppers, red onion, and green chili to the other side of the casserole dish. Place the chicken breast on top of the ingredients in the casserole dish and pour the BBQ sauce on top. Transfer the casserole dish to a preheated oven and cook at 350°F for 20 minutes. Shred the chicken breast with 2 forks and combine the pulled chicken with the sliced vegetables in the casserole dish. Slice the yeast bread open and spoon the pulled chicken mixture into the bun. Garnish the BBQ pulled chicken sandwich with fresh herbs before serving.

4. One-Pot Spaghetti Bolognese

Ingredients:

  • 1 tomato, grated
  • 1 onion, grated
  • 1 carrot, grated
  • 8 oz ground beef
  • 2 tbsp olive oil
  • 4 oz cooked spaghetti
  • parmesan cheese & fresh basil to garnish

Instructions:

Grate the tomato, onion, and carrot directly into a casserole dish, place the ground beef on top, and drizzle the olive oil over the ingredients. Transfer the casserole dish to a preheated oven and cook at 350°F for 20 minutes. Remove the casserole dish from the oven, break up the ground beef, and stir the cooked spaghetti noodles into the sauce. Garnish the spaghetti bolognese with parmesan cheese and fresh basil before serving.
