3 Eggsquisite Egg Recipes

Eaten for breakfast, lunch, as a snack, or as a side dish, eggs are always a great idea! From the frittata fans to the egg salad connoisseurs, everyone has their go-to way of serving and eating them. We love eggs served any which way, so we're always looking for egg-citing new ways to prepare them. These 3 new, creative recipes will bring even more variety into your egg-serving repertoire. You've never eaten eggs quite like this before, so get ready to scramble things up for a change!

1. Cheeseburger Hash Brown Omelet

You'll Need:

For the hash brown omelet:

  • 1 lb potatoes, peeled & grated
  • 2 eggs
  • 1 tsp herbes de Provence
  • 2 tbsp flour
  • ½ tsp pepper
  • 1 tsp salt

For the cheeseburger filling:

  • 12 oz ground beef, cooked
  • salt & pepper to taste
  • 2 tbsp ketchup
  • ½ onion, sliced
  • 2 tbsp chopped parsley
  • ½ cup shredded mozzarella

Here's How:

1.1 Fry the ground beef until cooked all the way through, season with salt and pepper, and set aside for later. For the hash brown omelet, peel the potatoes, grate them directly into a clean dishcloth, and squeeze out any excess liquid. Transfer the grated potatoes to a large mixing bowl and stir in the eggs, herbes de Provence, flour, salt, and pepper until combined.

1.2 Heat some vegetable oil in a frying pan over medium heat and pour in the hash brown omelet mixture. Fry for 3–4 minutes on both sides and spread a thin layer of ketchup on top. Spoon the cooked ground beef onto half of the omelet and top with onions, parsley, and shredded mozzarella. Fold the uncovered half of the omelet over the fillings, cover the frying pan with a lid, and heat the omelet on low heat until the cheese has melted.

2. Yin Yang Fried Egg

You'll Need:

  • 2 eggs, separated

Here's How:

2.1 Separate the eggs and whisk the egg whites and the egg yolks separately. Heat some vegetable oil in a non-stick frying pan and fold a piece of aluminum foil into a long rectangular strip, then mold it into the shape of an "S." Place the aluminum foil "S" in the middle of the frying pan.

2.2 Pour the egg whites onto the left side of the frying pan, saving about 1 tablespoon for later. Let the egg whites cook briefly, then remove the aluminum foil from the center of the pan. Pour the egg yolks onto the other side of the pan, making sure to save about 1 tablespoon for later.

2.3 Let the egg yolks cook briefly, then use a shot glass or a bottle cap to cut out a small circle from both sides. Pour the remaining egg white mixture into the hole on the side with the cooked egg yolks. Pour the remaining egg yolk mixture into the hole on the side with the cooked egg whites and let the yin yang fried egg finish cooking.

3. Fried Frittata Fingers

You'll Need:

  • 6 eggs
  • ½ red bell pepper, diced
  • 2 jalapeños, sliced
  • ¼ cup corn kernels
  • paprika & salt to taste
  • 1 cup shredded Monterey Jack
  • flour + whisked eggs + bread crumbs for the breading

Here's How:

3.1 Combine the eggs, bell pepper, jalapeños, corn, salt, paprika, and cheese in a large mixing bowl. 

3.2 Form a large piece of aluminum foil into a rounded triangle and place it in the center of a deep frying pan. 

3.3 Heat the frying pan over medium heat, place a square casserole dish on top of the aluminum foil ring, and pour the egg mixture into the casserole dish. 

3.4 Cover the deep frying pan with a lid and cook the frittata until it has solidified.

3.5 Slice the frittata into small rectangles, coat them in flour, whisked eggs, and bread crumbs, and fry them in hot cooking oil until golden brown.
