3 Corn On The Cob Sandwiches

You've probably been eating corn on the cob your entire life, and not once did you stop and think about how it could be improved. To be honest, neither did we... because seriously, how can sweet, buttery corn get any better?! We have 3 delicious answers to that, but the gist of it is: stuffed—corn—sandwich—on a stick— yep, we went there, and we bet now you're going to want to as well!

1. Bacon & Cheese Corn On The Cob

Yield: 2
Prep Time: 5 minutes
Cooking Time: 8 minutes

You'll Need:

  • 1 cooked corn on the cob
  • salt & pepper to taste
  • 4 slices of bacon
  • 2 thick strips of cheese
  • 2 tbsp melted butter

Here's How:

1. Cut a section of corn kernels off the cob in a clean sweep by slicing down vertically on 1 side. Repeat this on the other 3 sides and season the corn with salt and pepper. 

2. Lay a slice of bacon on your work surface horizontally and place another slice of bacon beneath it – the distance between the top of the first bacon slice and the bottom of the second bacon slice should be roughly the same length as the corn section. Place 1 of the corn sections on top of the bacon at the edge.

3. Push a popsicle stick into a thick strip of cheese and place it on top of the corn. 

4. Place another corn section on top of the cheese and wrap the bacon around the corn. Repeat for a second corn on the cob sandwich. 

5. Brush melted butter over the corn on the cob sandwiches, place them on an electric grill with the lid slightly open, and cook for 8 minutes.

2. BBQ Beef Corn On The Cob

Prep Time: 10 minutes
Cooking Time: 8 minutes

You'll Need:

  • 1 cooked corn on the cob
  • salt & pepper to taste
  • 4 oz ground beef
  • 1 tbsp diced onion
  • 1 garlic clove, minced
  • 1 tbsp chopped parsley
  • 2 tbsp BBQ sauce
  • 1 egg yolk
  • 2 tbsp melted butter

Here's How:

1. Cut a section of corn kernels off the cob in a clean sweep by slicing down vertically on 1 side. Repeat this on the other 3 sides and season the corn with salt and pepper. Mix the ground beef, onion, garlic, parsley, BBQ sauce, and egg yolk together and season with salt and pepper. Spread the ground beef mixture over 2 of the corn sections and place a popsicle stick on each one. Cover each section with another corn section and slightly press down.

2. Brush melted butter over the corn on the cob sandwiches, place them on an electric grill with the lid slightly open, and cook for 8 minutes.

3. Sweet Chili Chicken Corn On The Cob

Prep Time: 5 minutes
Cooking Time: 10 minutes

You'll Need:

  • 1 cooked corn on the cob
  • salt & pepper to taste
  • 3 scallion leaves
  • 2 chicken breast strips
  • 2 tbsp sweet chili sauce
  • 2 tbsp melted butter

Here's How:

1. Cut a section of corn kernels off the cob in a clean sweep by slicing down vertically on 1 side. Repeat this on the other 3 sides and season the corn with salt and pepper. Soak the 3 scallion leaves in hot water, rinse under cold water, and cut them in half for a total of 6 strips.

2. Stick a popsicle stick in each chicken breast strip and season with salt and pepper. Place the chicken on an electric grill, close the lid, and cook for 2 minutes. 

3. Lay out 3 scallion strips horizontally. Place a corn section on top of the scallion strips and place a cooked chicken breast strip on top of the corn. 

4. Spread the sweet chili sauce over the chicken, cover with another corn section, and wrap the scallion strips around the corn. Repeat for a second corn on the cob sandwich. 

5. Brush melted butter over the corn on the cob sandwiches, place them in an electric grill with the lid slightly open, and cook for 8 minutes.
