3 No-Bread Sandwiches That Will Blow Your Mind

The humble sandwich is one of the greatest food inventions ever, that is a simple fact. We could list all the reasons as to why that statement is true, but for the sake of brevity, sandwiches are a quick fix that'll fill you up nicely, without fail. Another thing that's so great about them is that they're essentially just blank canvases, meaning you can be as creative with making your sandwich as you want, and you don't even need bread to get the job done. Just check out these 3 amazing sandwiches made out of grated cauliflower, mashed potatoes, or yogurt!

1. Cauliflower Sandwich with Gorgonzola & Cranberries

You'll Need (for 4):

  • 1 lb cauliflower
  • 2 eggs
  • 2 cups shredded mozzarella
  • 1¼ cups bread crumbs
  • ⅓ cup flour
  • salt & pepper to taste
  • 8 oz gorgonzola cheese
  • ¼ cup dried cranberries

Here's How:

1.1 Grate the cauliflower using a cheese grater and then use a dish towel to squeeze out the moisture.

1.2 Put the grated cauliflower in a bowl, add the flour, bread crumbs, eggs, cheese, salt, and pepper, and mix everything together. Divide the mass into 8 equal parts and form them into rectangles.

1.3 Cover 4 of the cauliflower rectangles with the gorgonzola and cranberries. Then place one of the remaining cauliflower rectangles on top. Close the cauliflower patties by pressing them together at the sides. 

1.4 Add oil to a pan and fry the sandwiches over medium heat on both sides. Cover the pan with a lid and let the sandwiches cook for another 5-7 minutes.

2. Mashed Potato Sandwich with Bacon & Mozzarella

You'll Need (for 4):

  • 20 oz potatoes, boiled
  • 1¾ cups flour
  • ¾ cup parmesan
  • 1 tbsp baking powder
  • 2 eggs
  • salt & pepper to taste
  • 8 slices of cooked bacon
  • 1¼ cups shredded mozzarella

Here's How:

2.1 Put the cooked potatoes in a bowl and add the flour, baking powder, parmesan, eggs, salt, and pepper. Mash everything into a homogeneous mass.

2.2 Divide the mass into 8 equal parts and then form them into rectangles. Cover 4 of them with the cooked bacon and shredded mozzarella.

2.3 Place another mashed potato rectangle on top and then close the sides.

2.4 Add oil to a pan and fry the sandwiches over medium heat on both sides. Cover the pan with a lid and let the sandwiches cook for another 5-7 minutes.

3. Yogurt Grilled Cheese Sandwich with Ham & Pineapple

You'll Need (for 4):

  • 2½ cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sunflower oil
  • 8 oz plain yogurt
  • 8 slices of cheese
  • 8 slices of ham
  • 4 pineapple slices

Here's How:

3.1 Add the flour, yogurt, oil, baking powder, and salt to a mixing bowl and use your hands to combine everything into a smooth, supple dough. Allow the dough to rest for about 10 minutes, then divide it into 8 equal parts and form them into rectangles. 

3.2 In the following order, place cheese, ham, pineapple, ham, and cheese on top of 4 of the rectangles. Then place the other 4 dough rectangles on top and close the sides.

3.3 Add some oil to a non-stick pan and fry the sandwiches over medium heat on both sides. Cover the pan with a lid and then let the sandwiches cook for another 5-7 minutes.
