Crepes Cake

Ingredients
  

  • 1/2 cup cream
  • 2 tsp vanilla sugar
  • 9 oz mascarpone
  • 6 tbsp raspberry jam
  • 2 cups milk
  • 4 eggs
  • 2 cups flour
  • 1/4 cup melted butter
  • Berries as decoration (optional)

Instructions
 

  • Beat cream mixed with vanilla sugar. Add mascarpone and raspberry jam (or another kind of jam).
  • Mix the milk and eggs. Slowly pour in the flour and keep stirring to avoid clumps. Add vanilla sugar and melted butter.
  • Bake roughly 10 thin pancakes. Allow them to cool off.
  • Lay a pancake on a large plate and spread a few spoonfuls of cooled berry cream on top. Repeat to form a stack.
  • Cover the pancake stack with plastic wrap and place in the fridge for one hour.
  • Decorate with fresh berries or any other kind of fresh fruit.
