Sugar Snap Pea Salad with Feta

Ingredients
  

  • 1⅓ cups sugar snap peas
  • ¾ cup feta cheese
  • 1 small red chili pepper
  • ¼ cup peanuts roasted, unsalted
  • fresh mint to taste
  • 1 organic lemon zested and juiced
  • 3 tbsp olive oil
  • 1 tsp honey
  • salt & pepper to taste

Instructions
 

  • Wash the sugar snap peas and trim the ends.
  • Finely chop the chili pepper. Roast the peanuts in a dry skillet until fragrant. Roughly chop the mint.
  • In a bowl, whisk together olive oil, lemon juice, lemon zest, honey, salt, and pepper to make a dressing.
  • Combine the sugar snap peas, chili, mint, and peanuts with the dressing in a salad bowl. Crumble the feta over the salad and gently toss to combine.
