small red chili pepper

peanuts
roasted, unsalted
fresh mint

organic lemon
zested and juiced

Instructions
Wash the sugar snap peas and trim the ends.
Finely chop the chili pepper. Roast the peanuts in a dry skillet until fragrant. Roughly chop the mint.
In a bowl, whisk together olive oil, lemon juice, lemon zest, honey, salt, and pepper to make a dressing.
Combine the sugar snap peas, chili, mint, and peanuts with the dressing in a salad bowl. Crumble the feta over the salad and gently toss to combine.
