Cook the noodles in salted boiling water, pour them into a colander once they have cooked through, rinse with cold water, and let drain. Heat some olive oil in a pan over medium heat and arrange the noodles in a spiral shape.
Sprinkle half of the cheddar, gouda, and feta cheese and half of the parsley over the noodles, lightly press everything down, and add another spiral layer of noodles.
Sprinkle the remaining cheddar, gouda, feta, and parsley over the noodles, lightly press everything down again, and top with the final layer of noodles.
Beat the eggs, milk, olive oil, salt, and pepper together and pour the mixture over the noodles in the pan.
Cover the pan with a lid and let the pasta omelet cook for 15 minutes.
