Cut the cauliflower into florets and run them over a medium fine cheese grater. Microwave the shredded cauliflower for 5 minutes at 700 watts (or blanch it in boiling water for 30 seconds). Pour the cauliflower into a bowl lined with a clean dish towel and let it cool down a bit before using the cloth to squeeze out the moisture.
Mix the drained cauliflower with parmesan, eggs, corn starch, salt, and pepper. Form four equally-sized, round buns and arrange them on a sheet pan lined with parchment paper. Sprinkle sesame seeds over the buns and bake at 350°F for 15 minutes.
Season the ground meat with salt and pepper, form two hamburger patties, and fry them in a bit of oil until cooked through. Place a slice of cheddar cheese on each patty and let it melt.
Finally, assemble the burger. Place the hamburger patty between the two cauliflower buns and add lettuce, onions, tomato, ketchup, and any other condiments you want.
Cut the ends off the plantain and remove the peel. Cut the plantain in half and briefly fry both halves in hot oil.
Use a sturdy object, such as a cutting board, to flatten the plantain halves on your work surface. Briefly fry the "buns" once again in hot oil and remove with a slotted spoon. Repeat the entire process with the second plantain.
Repeat Step #2 to make the hamburger patties.
Finally, assemble the burger. Place the hamburger patty between the two plantain buns and add lettuce, tomato, yogurt dressing, and any other condiments you want.
