For many years, it has been turning the heads of dessert enthusiasts with its velvety mascarpone cream, strong coffee, and a touch of cocoa. How could you make such a dessert even better? By combining it with crêpes, for example! This recipe for Tiramisu Pancake Cake will make you completely happy.

Tiramisu Pancake Cake: The Best of Two Worlds

Once you try it, you’ll know it to be a simple truth: The Pancake cake is simply ingenious. Because why not enjoy a ‘more is more’ philosophy and combine two kinds of cake into one recipe? Don’t accuse of us gilding the lily all because we decided to add tirmisu to the fold too! Three desserts in one? Sometimes you just have to say yes!

Prepping our tiramisu pancake cake may seem a bit complex, but, trust us, the effort is worth it. Very importantly, first you need evenly thin pancakes. While these are cooling, you have time to dedicate yourself to the filling: This is a mixture of mascarpone, freshly whipped cream and a little vanilla extract. If you want a kick, add a dash of amaretto to the cream. This gives the whole thing a fine, nutty note.

Once the cream is ready, then layer pancakes and cream alternately on top of each other. Since a fine coffee flavor belongs to every good tiramisu, give each pancake a good sprinkle of espresso when layering. Finally, be heavy handed when dolling out individual heaps of cream on the cake and sprinkle everything with a good amount cocoa for a little bit of flair.

Tiramisu Pancake Cake

Ingredients
  

For the pancakes:

  • 1 cup all-purpose flour
  • 1 pinch salt
  • 2 tbsp sugar
  • 3 eggs
  • 2 cups milk
  • 3 tbsp butter

For the cream:

  • 1 cup heavy cream
  • 1 lb Mascarpone cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp Amaretto optional
  • cup espresso cooled
  • 2 tbsp Cocoa powder

Instructions
 

  • Start by preparing the pancake batter. In a bowl, mix the flour with a pinch of salt and sugar. Add the eggs and stir them in. Gradually pour in the milk and stir until a smooth batter is formed.
  • Let the batter rest for about 30 minutes. Then, melt the butter and then stir it into the batter.
  • Heat a pan and begin making your pancakes. Be sure that they are super thin! Let the pancakes cool on a plate once ready.
  • For the cream, whip the heavy cream until stiff and carefully fold it into the mascarpone. Sweeten the cream with powdered sugar and vanilla extract. If you're in the mood, add a dash of amaretto.
  • Layer the pancakes and mascarpone cream alternately on top of each other. Lightly sprinkle each pancake with espresso. Place the next pancake on top and repeat the process until all pancakes are used up.
  • Cover the cake with the remaining cream and generously sprinkle the surface with cocoa powder. Place the cake in the refrigerator for at least 2 hours so that the cream can properly soak into the pancakes!
