Teriyaki Pork Belly Stir Fry With Homemade Noodles

You'll Need:
For the pork belly:
- 3 lb pork belly
- 2 cups hot cooking oil
- salt, pepper & garlic oil to taste
For the teriyaki sauce:
- 1 piece of ginger
- 1 piece of leek
- 1 red chili pepper
- 2 garlic cloves
- ⅓ cup white wine
- 1 cup soy sauce
- 2 tbsp brown sugar
- 1 sprig of mint
For the noodles:
- 2 cups bread flour
- ⅓ cup water
- 1 pinch of salt
For the stir fry vegetables:
- 1 tbsp cooking oil
- ½ leek, julienned
- ½ carrot, julienned
- 1 handful of bean sprouts
Here's How:
1. Poke the surface of the raw pork belly several times with a fork and season the meat with salt, pepper, and garlic oil. Place the pork belly on a baking tray, transfer the pan to a preheated oven, and cook at 325°F for 2 hours. For the teriyaki sauce, skewer the ginger, leek, chili pepper, and garlic, and brown them with a culinary torch. Add the browned vegetables to a cocktail shaker together with the white wine, soy sauce, brown sugar, and mint and heat the ingredients on a stovetop, making sure to occasionally shake the cocktail shaker.
3. For the stir fry vegetables, heat some cooking oil in a pan over medium heat and fry the leek and carrot strips. Add the bean sprouts, fold in the cooked noodles, pour some of the teriyaki sauce into the pan, and let the sauce simmer.
4. For the crispy pork belly, heat 2 cups of cooking oil. Remove the cooked pork belly from the oven and pour the hot cooking oil over the meat to form a crust.
5. Cut the pork belly into individual strips and serve with the teriyaki stir fry and homemade noodles. Garnish with chili peppers and cilantro before serving.
