Healthy & Original Sweet Potato Toast
How do you start your day? Perhaps with fresh biscuits, cereal, toast, or... sweet potatoes? Yes, you read that correctly: sweet potatoes! This root vegetable is the next big hit when it comes to a healthy breakfast. If you're tired of the same old white or wheat toast, use a sweet potato to create an original variation on a breakfast staple!
- 1 sweet potato
- 1 avocado
- 1 lime
- 1 banana
- peanut butter
- Wash the sweet potato thoroughly and cut into thin slices.
- Place the slices upright in a toaster.
- Meanwhile, peel the avocado and cut into thin slices.
- As soon as the sweet potato slices pop out of the toaster, place the avocado slices on top and finish it off with a bit of freshly squeezed or grated lime.
When it comes to topping your sweet potatoes, you can really go nuts! As strange as it may sound, a peanut butter, banana and cinnamon combo is a great choice. Morning "toast" certainly doesn't get more healthy than this. Enjoy!
