Healthy & Original Sweet Potato Toast

How do you start your day? Perhaps with fresh biscuits, cereal, toast, or... sweet potatoes? Yes, you read that correctly: sweet potatoes! This root vegetable is the next big hit when it comes to a healthy breakfast. If you're tired of the same old white or wheat toast, use a sweet potato to create an original variation on a breakfast staple! 

You'll Need:

  • 1 sweet potato
  • 1 avocado
  • 1 lime
  • 1 banana
  • cinnamon
  • peanut butter

Here's How:

  1. Wash the sweet potato thoroughly and cut into thin slices. 
  2. Place the slices upright in a toaster.
  3. Meanwhile, peel the avocado and cut into thin slices.  
  4. As soon as the sweet potato slices pop out of the toaster, place the avocado slices on top and finish it off with a bit of freshly squeezed or grated lime.

When it comes to topping your sweet potatoes, you can really go nuts! As strange as it may sound, a peanut butter, banana and cinnamon combo is a great choice. Morning "toast" certainly doesn't get more healthy than this. Enjoy!
