Sweden has a lot to offer, not only in terms of landscape, but also culinary delights. The Scandinavian country is home to meatballs, crispbread, and cinnamon rolls. Another sweet treat that we love to bake again and again from those northern neighbors is the Swedish plum cake.

Delicious & Easy: Our Baking-Sheet Swedish Plum Cake

Sheet cakes are great because they are easy to bake and will feed the whole family: Swedish plum cake is no exception. With its moist dough and sweet, aromatic plums, this cake will quickly become a favorite among family and friends. Whether for afternoon coffee or as a delicious dessert, this cake is always a welcome addition to the table.

For our recipe you will need about 2 lbs of plums, which we know! It’s a lot. But it will pay off in spades. It’s best to get them fresh from the farmer’s market or organic grocery, given that the plum’s skin will be incorporated into the dessert. Now, using pantry staples, you will mix up a nice batter and spread it immediately onto your baking sheet. Afterwards, you will need to pit and chop the plums and spread them onto the batter. Finally, all you need to do is mix up a cinnamon-sugar mixture to dust the plums with. Trust us, the aroma is heavenly!

By the way, this cake also tastes great with apples or pears. Once you’ve got the batter down, we suggest trying this cake out every season, with whatever is freshest!

Swedish Plum Cake

Ingredients
  

  • 2 lb plums

For the dough:

  • 1 cup butter
  • ¾ cup sugar
  • 4 eggs
  • 1 pinch of salt
  • 2 tsp vanilla extract
  • 2 cups flour
  • ½ cup cornstarch
  • 1 tsp baking powder

For the cinnamon-sugar mixture:

  • 1 cup sugar
  • 2 egg yolks
  • 2 tsp cinnamon

Additionally:

  • breadcrumbs and butter for the baking sheet

Instructions
 

  • Wash, halve, and pit the plums. Cut them into quarters.
  • Preheat oven to 350°F. Grease a deep baking sheet with butter and dust it with breadcrumbs.
  • Cream together butter, sugar, vanilla extract, and salt. Beat in the eggs one at a time.
  • In a separate bowl, mix flour, baking powder, and cornstarch. Now, incorporate the dry ingredients into the batter.
  • Spread the batter evenly on the baking sheet and arrange the plum pieces densely on top.
  • Mix the egg yolks with sugar and cinnamon and pour the mixture over the plums.
  • Bake the cake for 50 minutes and let it cool afterward.
  • Serve plain or with a dollop of whipped cream.
