Round Out Your Day With An XXL Sushi Donut

Are you a huge sushi fan because you love how the combination of rice, fish, and veggies – paired with spicy soy sauce and a touch of wasabi – creates a true taste explosion in your mouth? Then you're in luck, because not only does this recipe offer all of that and more, but it also does it XXL style!

You'll Need:

  • 2 lbs sushi rice
  • 67½ fl oz water
  • 2½ fl oz rice vinegar
  • 1½ oz sugar
  • 1 tbsp salt

For the filling:

  • 4 carrots
  • 17½ oz surimi
  • 3½ tbsp chili sauce
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tsp ginger
  • lemon zest
  • juice of ½ lemon
  • 17½ oz Japanese seaweed salad (wakame)

For the cover:

  • ½ cucumber
  • 17½ oz tuna
  • 2 avocados
  • 17½ oz white fish
  • 17½ oz salmon
  • 1 tsp white sesame seeds
  • 1 tsp black sesame seeds
  • 2 spring onions

Here's How:

1. Wash the rice three times, so that the water becomes very clear. Drain the water, pour in 67½ fl oz of fresh water, and bring the rice to a boil over medium heat. Turn off the heat, cover the pot with a lid, and let the rice simmer for 15 minutes. Transfer the cooked rice to a bowl. Mix the rice vinegar, sugar, and salt together, pour it over the rice, and gently stir it all together. 

2. Line a Bundt pan with plastic wrap, evenly distribute two-thirds of the rice around the mold, and firmly press it against both edges, making sure to leave space in the middle.

3. Slice the carrots into long, fine strips, and distribute them evenly between the rice walls.

4. Rip the surimi sticks into long, thin pieces and mix them together with the chili sauce, sesame oil, ginger, lemon zest, and lemon juice. Now spread this mixture over the carrots.

5. Add the Japanese seaweed salad to the mold before spreading the remaining rice on top and pressing it down with damp fingertips.

6. Cover the top of the pan with a large plate or cutting board and flip it over. Gently remove the pan and the plastic wrap.

7. Garnish the cake in sections with cucumber, tuna, avocado, white fish, and salmon. Top it all off with sesame seeds and spring onions and the gigantic sushi donut is ready.
