Strawberry season runs from May through July, giving you plenty of time to enjoy these sweet, juicy berries. This means you’ll also have plenty of time to make this recipe fresh. Our sunken strawberry cake is really easy to make and is sure to be a success, even for the greenest of bakers.

Start by making the cake batter using flour, sugar, vanilla pudding powder, eggs, and oil. Once ready, pour the butter into the baking pan. Next, simply top the cake with strawberries and pop the cake into the oven. The trick: The strawberries partially sink into the dough while baking, hence the sunken strawberry cake. Isn’t it a sight and bite to behold?

If you like, dust the strawberry cake with powdered sugar once it’s cooled. And the cake also looks great with a dollop of whipped cream or Coolwhip or a scoop of vanilla ice cream.

Ingredients
  

  • 3 cups fresh strawberries

For the batter:

  • cups all-purpose flour
  • 1 package (3.4 oz) vanilla instant pudding mix
  • 1 tsp baking powder
  • zest of ½ lemon optional
  • 4 eggs
  • cup sugar
  • 2 tsp vanilla extract
  • ½ cup vegetable oil canola or sunflower

Additionally:

  • powdered sugar for dusting (optional)

Instructions
 

  • Line a 10-inch springform pan with parchment paper and preheat the oven to 350°F.
  • Wash and hull the strawberries, then halve them.
  • In a bowl, mix the flour, pudding mix, baking powder, and lemon zest together.
  • Separate the eggs and set the egg yolks aside. In a separate bowl, beat the egg whites until stiff peaks form. Gradually add the sugar and vanilla extract, while continuously beating.
  • Gradually whisk in the egg yolks and oil.
  • Fold in the flour mixture in two batches, mixing gently until just combined.
  • Pour the batter into the pan and arrange the strawberries on top.
  • Bake for 50 minutes. Don’t forget to test for doneness with a toothpick or cake tester!
  • Optional: After cooling, dust with powdered sugar.
