Chocolate Dessert Cones Filled With Chocolate Mousse

Yield: 5
Prep Time: 15 minutes
Cooking Time: 10 minutes
Difficulty Level: Advanced

You'll Need:

For the chocolate dessert cones:

  • 2 cups semi-sweet chocolate chips, tempered
  • 1¼ cup white chocolate chips, tempered

For the chocolate mousse:

  • 1½ cups semi-sweet chocolate chips, melted
  • 2 eggs
  • 2 cups whipped cream

Here's How:

1. For the chocolate dessert cones, temper the semi-sweet chocolate chips and white chocolate chips in separate bowls. Cut a circle out of 5 letter-sized transparency film sheets, each with a 6-inch diameter. Mold the 5 plastic circles into cones and tape them at the bottom and sides. Pour some tempered semi-sweet chocolate into each plastic cone and swirl them around until the inside of each plastic cone is completely coated. Place the chocolate-coated plastic cones upright in tall shot glasses and let the chocolate harden.

2. Place another letter-sized transparency film sheet on a wooden chopping board and drizzle some of the tempered semi-sweet chocolate over the plastic in a circular pattern. Once the chocolate has set, after about 5 minutes, pour the tempered white chocolate over the plastic sheet and smooth it out. Once the white chocolate has set, break the chocolate sheet into large pieces.

3. For the chocolate mousse, melt the semi-sweet chocolate chips and beat the eggs over a hot water bath until fluffy, about 3-4 minutes. Remove the bowl from the water bath and beat the eggs for another 5 minutes. Gradually stir in the melted semi-sweet chocolate and let everything cool to room temperature. Gently fold in the whipped cream and spoon the finished chocolate mousse into a piping bag.

4. Pipe the chocolate mousse into the chocolate dessert cones and garnish with the mixed chocolate bark pieces. Carefully remove the plastic cones before serving.
