Yield: 1
Prep Time: 35 minutes
Cooking Time: 10 minutes
Difficulty Level: Moderate

You'll Need:

For the strawberry steak salad cake:

  • 12 oz steak + 1 tbsp steak seasoning
  • 1 head of iceberg lettuce
  • 3 flour tortillas
  • 8 oz feta cheese chunk, sliced
  • 3 red onions, sliced
  • 1 handful of spinach leaves
  • 6 strawberries, sliced
  • 4 oz pecans

For the grilled strawberry vinaigrette:

  • 4 strawberries, grilled
  • ¼ cup olive oil
  • ¼ cup vinegar
  • 1 tsp mustard
  • salt & pepper to taste
  • 1 tbsp honey

Here's How:

1. Season the steak with your favorite seasoning and place it in a pan over medium heat. Skewer 4 strawberries and place the wooden skewer in the pan next to the steak. Cook the steak for about 5 minutes on each side and rotate the strawberry skewer as needed. Cook the steak to desired doneness, wrap in aluminum foil, and let rest for 15 minutes. Set the grilled strawberries aside for later to be used in the grilled strawberry vinaigrette

2. Cut the steak into even strips and briefly toast the pecans. Remove the largest leaves from the head of iceberg lettuce and use them to line the bottom and sides of a 10-inch springform pan. Place a flour tortilla on top on top of the lettuce on the base of the pan.

3. Top the tortilla with a layer of steak slices, followed by a layer of feta cheese slices, and finally a layer of red onion slices. Top the red onion layer with another tortilla.

4. Spread a handful of spinach leaves over the tortilla and top with a layer of strawberry slices and a layer of toasted pecans.

5. Place the last tortilla on top of the pecan layer and sprinkle the remaining ingredients on top. Transfer the springform pan to the fridge and let chill 2 hours.

6. For the grilled strawberry vinaigrette, puree the 4 grilled strawberries from Step #1 together with the olive oil, vinegar, mustard, salt, pepper, and honey until smooth. Remove the ring from the springform pan, cut the strawberry steak salad cake into individual slices, and drizzle some of the grilled strawberry vinaigrette over each piece before serving.

Whether you serve it as a cold main dish on a hot summer's day or as a tasty side salad to go with your regular dinner, this unique salad cake with a fruity homemade dressing will be a welcome change from your usual meals!
