These warmer days are simply incomplete without strawberry cake, at least that’s how we feel. At Scrumdiddlyumptious we are always looking for new, delicious recipes to spice up our favorite cake. But classics are also always welcome on our table. One such being our strawberry cake with vanilla pudding. It tastes great on any occasion and is wonderfully easy to prepare. If many guests come to visit at once, we simply adjust the classic recipe to sheet-pan size.
Our strawberry sheet pan cake with vanilla pudding is a treat with three layers: It begins with a sponge cake base, then a layer of vanilla pudding, and of course, fresh strawberries to top. The preparation is straightforward, and really, only the sponge cake base needs a little attention and elbow grease.
You’ll start by separating the eggs. Once you’ve done this, beat the egg whites into meringue and the egg yolks with sugar until frothy. Now, carefully fold the yolks into the meringue, then sift in a mixture of flour and baking powder. Keep in mind, it’s important with sponge cake not to stir too vigorously, otherwise it will lose much-needed volume. If you’re really gentle with the stirring, you won’t even need baking powder.
While the cake’s base is baking in the oven, you can take care of the pudding. Use instant vanilla pudding mix if you want to make life a little easier. Feel free, if on hand and in mind, to incorporate your favorite pudding mixture. Just bear in mind to watch how many eggs you are using!
Once ready, you can let both your strawberry sheet pan cake’s base and pudding chill. This is exactly when you can take some free time to clean and hull the strawberries. If you like a little shine, you can also mix up a clear glaze. Once the sponge cake is chilled and pudding set, spread the pudding on the base, place the strawberries on top, and, if so desired, drizzle the glaze on top. Strawberry Sheet Pan Cake with Vanilla Pudding
Equipment
- 1 12 x 16 in. baking sheet
Ingredients
For the base:
- 5 eggs
- ¾ cup sugar
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ⅓ cup cornstarch
- 1 tsp baking powder
For the pudding layer:
- 2 packets vanilla instant pudding mix
- 3 ¼ cups milk
- ¼ cup sugar
Additionally:
- 3 lb fresh strawberries (around 6 cups)
- 2 tbsp sugar
- 1 cup water
Instructions
- Preheat oven to 350°F.
- Separate the egg whites from the yolks.
- Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks with sugar and vanilla extract until creamy.
- Carefully fold the egg whites into the egg yolk mixture.
- In a separate bowl, mix the flour, cornstarch, and baking powder. Sift the mixture over the egg whites and quickly fold it in.
- Pour the batter onta a baking sheet lined with parchment paper and then smooth it out.
- Bake for about 20 minutes, then let cool completely.
- While the cake is baking, prepare the pudding with milk and sugar according to package directions. Let it cool, stirring occasionally.
- Meanwhile, gently wash and hull the strawberries. Cut the larger strawberries in half.
- Spread the cooled pudding evenly over the cooled cake base. Neatly arrange the strawberries on top of the pudding, making sure to cluster them together.
- If desired, prepare the clear glaze with sugar and water according to package directions. Spread it evenly over the strawberries.
