Strawberry Mole Cake

We all love a fluffy, freshly-baked chocolate cake, so why does this recipe start by apparently destroying a work of art? We don't want to give the game away from the get-go, but trust us, there's a very good reason for scraping out the center of this cake!

You'll Need:

For the chocolate cake:

  • 1¾ sticks butter
  • ¾ cup sugar
  • 4 eggs
  • 1¼ cups hazelnut flour
  • 1¼ cups flour
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • 1 pinch of salt

For the strawberry layer:

  • ⅓ cup strawberry jam
  • 8 oz whole strawberries

For the cream filling:

  • 8 oz cream cheese
  • 1½ cups whipped cream
  • ½ cup mascarpone cheese
  • ¼ cup sugar

Here's How:

  1. For the chocolate cake, add the butter, sugar, eggs, hazelnut flour, flour, cocoa powder, baking powder, and salt to a large bowl and combine with a hand mixer. Pour the cake batter into a greased 9-inch cake pan and smooth out the top. Transfer the cake pan to a preheated oven and cook at 350°F for 35 minutes.
  2. Once the cake has cooled, hollow out the inside, creating a 1-inch-deep well. Make sure to leave the edges of the cake intact and set the cake crumbs aside for later.
  3. Spread the strawberry jam over the bottom of the cake well and place the whole strawberries upright in the jam.
  4. For the cream filling, combine the cream cheese, whipped cream, mascarpone cheese, and sugar. Fill the cake well with the cream filling and continue spreading it over the cake in the shape of a mound.
  5. Sprinkle the chocolate cake crumbs that you set aside earlier over the cream filling until it is completely covered.
